Giardiniera (pickled vegetables)

Ingredients

2cupsCauliflower, cut into small chunks
½Red pepper, quartered and sliced
1Green onion, sliced
1Clove garlic, sliced
1cupWhite vinegar
½cupDry white wine
¼cupWater
¼cupApple juice
2teaspoonsSalt (omit for low-sodium diets)
8Peppercorns
1teaspoonDried dill weed

Directions

Mix all the ingredients and refrigerate in a closed jar for two days.
