Giardiniera (pickled vegetables)

Yield: 6 servings

Measure Ingredient
2 \N Carrots, peeled and sliced diagonally
1 \N Celery stalk, sliced diagonally
2 cups Cauliflower, cut into small chunks
½ \N Red pepper, quartered and sliced
1 \N Green onion, sliced
1 \N Clove garlic, sliced
1 cup White vinegar
½ cup Dry white wine
¼ cup Water
¼ cup Apple juice
2 teaspoons Salt (omit for low-sodium diets)
8 \N Peppercorns
1 teaspoon Dried dill weed

Mix all the ingredients and refrigerate in a closed jar for two days.
