Pickled mixed vegetables

Yield: 5 pints

Measure Ingredient
2 xes Cauliflower heads, medium
2 xes Green peppers, medium
2 xes Sweet red peppers, medium
1½ pounds Onions
2½ cup White vinegar
1½ cup Water
3 tablespoons Salt
1 tablespoon Mustard seed
1 tablespoon Celery seed
¼ teaspoon Ground tumeric
¾ cup Honey

Break cauliflower into small flowerets, cook in unsalted water 5 min, drain. Cut peppers into ¼ inch strips; quarter onions. Combine remaining ingredients except honey in a pot; heat to boiling. Add veggies; simmer 2 min then add honey.

Continue simmering while packing one clean, hot pint jar at a time.
