2 xes | Sweet red peppers, medium |
1½ pounds | Onions |
2½ cup | White vinegar |
1½ cup | Water |
3 tablespoons | Salt |
1 tablespoon | Mustard seed |
1 tablespoon | Celery seed |
¼ teaspoon | Ground tumeric |
¾ cup | Honey |
Break cauliflower into small flowerets, cook in unsalted water 5 min, drain. Cut peppers into ¼ inch strips; quarter onions. Combine remaining ingredients except honey in a pot; heat to boiling. Add veggies; simmer 2 min then add honey.
Continue simmering while packing one clean, hot pint jar at a time.
