Gail's rice and spelt flour bread (gluten free)

Yield: 2 1/4 ts act

Measure Ingredient
\N \N -packet)
1 cup Brown rice flour
1 cup White rice flour
1 cup Spelt flour
3½ teaspoon Xanthan gum
¼ cup + 2 tsp sugar
1½ teaspoon Salt
1⅓ cup Nonfat dry milk powder, melted
2 larges Eggs, well beaten
1¾ cup Warm Water


1. Place all ingredients, except the warm water, in the bread pan and press start. While the machine is kneading, gradually pour in the water. If the dough does not mix well, use a rubber spatula to assist.

2. After the baking cycle ends, remove from the pan and place on a wire rack, and allow to cool 1 hour before slicing.
