Frijoles con crema (bean dip)

½Onion; chopped finely
2Green chillies; chopped very finely

1Lime or lemon; juice of

300gramsFrijoles Refritos; (re-fried beans)
; (10oz)
50gramsCheddar cheese; grated (2oz)
50gramsCream cheese; (2oz)
1150 millilit single cream; (5 floz)

Directions

Mix the tomatoes, coriander, onion, chillies, lime or lemon juice, salt and pepper together and set aside.

Heat the oil, add the re-fried beans and stir them for 2 minutes until they are bubbling. Remove from the heat and add the cheeses, stirring constantly until they melt.

Add the tomato mixture and single cream and serve at room temperature.
