Fried oysters

Measure Ingredient
6 \N Oysters
1 large Egg
\N \N Saltine Crackers
2 teaspoons Mayo
¼ teaspoon Pepper
½ teaspoon Hot Sauce
\N \N Seafood sauce for dipping

Chuck oysters, reserve liquor. Beat egg and add to reserved liquid, add mayo and mix well. Crush several crackers in a bowl; dip oysters in the liquid and then in the crackers; place on a plate, cover, and refrigerate for 1 hour. Crush more crackers; dip the oysters again in the liquid and crackers, and refrigerate again for 30 minutes to set the coating. Deep fry until golden, drain and serve with seafood sauce.
