Fresh nutty rice noodles with egg

Ingredients

| 450 | grams | Rice noodles or vermicelli |
| 1 | tablespoon | Hoi sin sauce |
| 1 | tablespoon | Soy sauce |
| 1 | teaspoon | Ginger wine; (optional) |
| 2 | teaspoons | Sesame seed oil |
| 2 | teaspoons | Ordinary vegetable oil |
| 1 | teaspoon | Chilli sauce |
| 1 | teaspoon | Sugar |
| 2 | tablespoons | Sesame seeds |
| 3 | Spring onions; chopped very finely | |
| 4 | Eggs made into omelettes and cut into | |
| ; shreds to garnish | ||
Directions
Put the noodles in a large bowl, cover with boiling water and leave to soak for 5 minutes before draining and keeping to one side.
Add the rest of the ingredients, toss and serve hot.
