Fresh fruit salad with orange vinagrette

2tablespoonsOrange Juice
tablespoonWhite Wine Vinegar
½teaspoonOrange Peel, finely grated
½teaspoonSalt
Lettuce
1mediumAvocado, peeled & sliced
2cupsFresh Fruit Slices or Chunks
Mint Leaves

Directions

Whisk oil, orange juice, vinegar, orange peel and salt in a bowl.

Line four salad plates with lettuce. Arrange avocado and other fruits on lettuce, dividing equally. Drizzle each serving with a generous tablespoon of vinaigrette.
