Filipino bean, shrimp and spinach

Yield: 2 servings

Measure Ingredient
2½ cup Water
1 medium Tomato, sliced
4 ounces Onion, finely diced
1 small Garlic clove, minced
Salt and pepper or soy sauce
To taste
12 ounces Cleaned shrimp
1 cup Cooked fresh lima beans
1 cup Cleaned spinach

In saucepan combine water, tomato, onion, garlic, salt and pepper.

Bring to a boil. Lower heat and simmer for 15 minutes. Add shrimp, beans, and spinach and return to simmer for 5 to 8 minutes more or until shrimp are pink and firm. *From Weight Watchers International Cookbook* Submitted By MICHELLE BRUCE On 01-31-95
