Fennel with tomatoes (microwave)

Ingredients

2tablespoonsOil
2ouncesSmoked streaky bacon; cut into strips
ounceOnions; finely sliced
1poundsFennel
2largesTomatoes; skinned and coarsely chopped
3tablespoonsFresh lemon juice
½cupGrated Parmesan cheese
Salt and pepper
1tablespoonChopped fresh parsley

Directions

Pour the oil into a dish large enough to cook the fennel in. Add the bacon and onions. Cover and microwave on High for 3 minutes.

Remove the stalks and tough base of the fennel. Slice finely, rinse, and drain.

Add the fennel and tomatoes to the onions and pour the lemon juice over. Cover and microwave on high for 10 minutes.

Add the grated Parmesan and season with salt and pepper. Stir well. Cover and microwave on high for 1 minute. Leave to stand for 2 minutes, then sprinkle with chopped parsley and serve.
