Fennel & broccoli ratatouille

2tablespoonsOlive oil
1Sweet red onion
1Fennel bulb
2Fresh, ripe tomatoes
1Sweet red pepper
1cupBroccoli florets
½cupHot pepper salsa

Directions

Heat oil and saute onions until limp. Slice fennel and saute in pan along with pepper and then tomatoes. Add broccoli and continue to cook another 5 minutes.
