2 pounds | Dried giant white beans |
2 cups | Oil |
1 each | Head of garlic |
3 eaches | Onions, med., chopped |
1 tablespoon | Celery, chopped |
½ cup | Parsley, minced |

1 cup | Hot water |
1¾ pounds | Tomatoes, peeled,strained OR |
1 tablespoon | Tomato paste + 1 1/2 c water |

Wash the beans, place in water, and soak them overnight. Drain them, then place in a pot of fresh cold salted water; cook for 45 min.; drain. Meanwhile, place oil, garlic, and onions in a baking pan and bake in preheated 350 F. oven until golden. Add beans, celery, parsley, salt & pepper, and hot water. Bake 30 min. longer. Remove from oven, stir the beans, pour in tomatoes (or diluted tomato paste). Return to oven and bake until only the oil remains.
