Fassoulatha (bean soup)

Yield: 6 Servings

Measure Ingredient
1 cup Large, dried white beans
2 \N Quarts of water
1 cup Sliced celery (1/2\" Pieces)
2 cups Chopped onion
4 \N Medium carrots, cut in 1/2\"
\N \N Slices
½ cup Chopped parsley
1 tablespoon Tomato paste
1 cup Olive oil
1 tablespoon Crushed oregano
3 tablespoons Wine vinegar

Bring beans to a boil in the water. Reduce heat and simmer for an hour.

Add remaining ingredients. Simmer for 2 more hours. Add salt and pepper to taste. Serve with crusty bread. Shared by Deborah Kuhnen, Mississauga, Ontario, Canada.
