Eggnog quick bread

Yield: 16 Servings

Measure Ingredient
2 Eggs
1 cup Sugar
1 cup Dairy eggnog (not canned)
½ cup Butter or margarine; melted
2 teaspoons Rum extract
1 teaspoon Vanilla
2¼ cup Flour
2 teaspoons Baking powder
½ teaspoon Salt
¼ teaspoon Nutmeg

Heat oven to 350^ F. Grease bottom only of 9x5 inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, salt and nutmeg; stirring just until dry ingredients are moistened. Pour into greased pan. Bake for 45-50 minutes. Cool in pan for 10 minutes then remove. Cool completely Recipe By : Pillsbury
