Easy pasta salad (vegan)

1poundsTri-colored pasta, corkscrew
1Bunch broccoli
2Carrots, peeled and sliced
1Cucumber, peeled, halved, and sliced
1smallRed pepper, chopped
1Or 2 green onions, thinly sliced
1Bottle Fatfree Ital Dressing

Directions

Cook pasta, drain and rinse with cold water. Cut broccoli into florets and cook in microwave for a minute or so (or blanch in some hot water). Rinse with cold water.

Put pasta, broccoli and the rest of veggies in a big bowl. Chill well. Just before serving, pour dressing over pasta and vegetable and stir well. You can add whatever vegetable you'd like, but don't skimp on the red pepper. It adds a wonderful sweetness.
