Earl's potato omelette

Measure Ingredient
2 mediums Onions, peeled, sliced
2 tablespoons Lard or oleo
6 mediums Potatoes, peeled, boiled
\N \N Salt and pepper
3 eaches Eggs, beaten

INGREDIENTS

DIRECTIONS

In a skillet, melt shortening. Saute onions until opague. Slice potatoes while onions are cooking. Add potatoes to skillet. Salt and pepper. Add beaten eggs and turn several times with pancake turner to mix seasoning and eggs into onions and potatoes. Cook under medium heat until firm.
