4Feet small hog casings
4poundsDomestic duck
2teaspoonsSalt, or to taste
2teaspoonsBlack pepper
4clovesVery finely minced garlic
1teaspoonMarjoram
1teaspoonSummer savory
½teaspoonAllspice
1tablespoonSweet paprika

Directions

Prepare casings. Grind duck through the fine disk; combine with remaining ingredients and grind again. Stuff casings and twist off into 3-4" links. Saute in oil until evenly browned and cooked through.
