1Recipe double boiler Polenta see preceeding recipe
4tablespoonsUnsalted butter, softened +
4Pats butter for garnish
½cupGrated Parmesan cheese, plus more for passing

Directions

Prepare Double-Boiler Polenta. Stir in butter and ½ cup Parmesan cheese. Divide polenta among 4 bowls. Top each with a pat of butter and sprinkle generousely with Parmesan cheese to taste.
