Double blueberry tart

Yield: 1 Servings

Measure Ingredient
½ cup Sugar
¾ cup Butter
1 large Egg yolk
2 cups Cake flour

Cream butter and sugar well. Add flour. Divide in thirds and pat each third in 8 inch springform pan. Will refergerate for 3 days or can be frozen.

Filling (Makes 1): 3 c blueberries 6 T sugar ½ t lemon peel 1 T lemon juice 1 baked shell powdered sugar Bring 2 c blueberries to a boil on high heat, stir often and cook for 8-10 min. Cool berries covered, then chill over night. Pour into baked shell and arrange remaining berries on top. Sprinkle with powdered sugar.
