David's besan-stuffed chiles

\N \N Besan
\N \N Onion; chopped
\N \N Salt
\N \N Cumin
\N \N Green chiles; e.g. large cayennes, fresno, jalapeno, large serranos
\N \N Ghii/oil
\N \N Black mustard seeds
\N \N Yoghurt

Stuff spice/besan mix into green chiles (seeds and membranes removed, per taste preference, but also to make some room there). Fry chiles in ghii.

Add black mustard seeds (they should pop a bit). Add yoghurt and cook slowly until done.
