David's besan-stuffed chiles

Measure Ingredient
Besan
Onion; chopped
Salt
Cumin
Green chiles; e.g. large cayennes, fresno, jalapeno, large serranos
Ghii/oil
Black mustard seeds
Yoghurt

MIX TOGETHER

Stuff spice/besan mix into green chiles (seeds and membranes removed, per taste preference, but also to make some room there). Fry chiles in ghii.

Add black mustard seeds (they should pop a bit). Add yoghurt and cook slowly until done.
