Date and banana chutney

12Bananas -- sliced
3cupsOnions -- finely chopped
1cupWell packed dates --
Chopped
2cupsVinegar
2teaspoonsCurry powder
1cupGinger -- finely chopped
1tablespoonSalt
2cupsBrown sugar or molasses

Directions

Put the bananas, onions and dates in a heavy pot, pour the vinegar over and cook until tender. Beat to a pulp and add the curry powder, ginger, salt, and molasses. Cook again until a rich brown color is reached. Bottle in clean hot jars.
