Curried potatoes (microwave)

Yield: 4 servings

Measure Ingredient
2 pounds Waxy potatoes
3½ ounce Shallots; finely chopped
3½ ounce Smoked streaky bacon; diced
\N \N Salt and pepper
⅔ cup Milk
1½ teaspoon Curry powder
3 ounces Parmesan cheese; grated

Peel the potatoes and rinse under pleny of cold running water. Pat dry. Grate.

Put the shallots and bacon in an oval Pyrex dish. Microwave, uncovered, on High for 3 minutes.

Sprinkle the mixture with salt and pepper and add the potatoes.

Stir well and pour over the milk. Cover and microwave on high for 12 minutes. Leave to stand for 3 minutes.

Mix together the curry powder and Parmesan cheese and sprinkle over the potato mixture. Microwave, uncovered, on High for 2 minutes. Serve in the same dish.
