Cuban chicken

| ¼ | cup | Oil; vegetable |
| 1 | Garlic clove; minced & peel | |
| 1 | Onion; small purple peeled | |
| ½ | pack | Peas;frozen,thawed;10 oz |
| 1 | can | Tomatoes;1 lb peeled, drained & chopped |
| 3 | cups | Rice; cooked, cold |
| 1 | cup | Ham; slivered |
| 2 | cups | Chicken;cubed & cooked |
| ½ | cup | Olives;green; pimento stuffed sliced |
| 1 | Avocado;peeled & pitted | |
Directions
Heat wok, add oil, garlic, onion & peas. Stir fry about 2-3 minutes till onion is soft. Add tomatoes, rice, ham, chicken and olives. Stir and lift till heated, place in centre of large platter. Surround with slices of avocado.
