Creamy peach pie

Measure Ingredient
1 pack Peach-flavored gelatin -- 3
\N \N Ounces
⅔ cup Boiling water
1 cup Vanilla ice cream
1 carton Frozen whipped topping --
8 ounces Thawed
1 cup Fresh peaches -- diced
\N \N Peeled
1 each Deep-dish pastry shell --
9 \N In baked
\N \N Sliced peaches and or mint
\N \N Leaves, optiona

In a large bowl, dissolve gelatin in boiling water; stir in ice cream until melted and smooth. Add whipped topping and mix well. Fold in peaches. Pour into pastry shell. Chill until firm, about 3 hours. If desired, garnish with peaches and/or mint leaves. Yield; 6-8 servings Recipe By : Taste of Home
