TURKEY MEATBALL - MAKES 16

Recipe by: Cooking With Mickey-Gourmet Mickey Cookbook Vol II In a 4-qt soup pot, add chicken broth, carrots, celery, onion, tomatoes, and garlic. Bring to a boil and simmer 20 mins until vegetables are tender but not mushy. Add lettuce, ham, scallions, and rice. Season with salt and pepper to taste. Add turkey meatballs.

Serve immediately.

TURKEY MEATBALLS YIELD: 16 meatballs Preheat oven to 350 F. Combine all ingredients in a small bowl and mix well. Form into ½-inch meatballs and place on a greased baking sheet. Bake for 10 to 12 minutes until firm and fully cooked. Remove from oven and add to soup.
