| 8 | Pheasant breasts | |
| 2 | Garlic cloves-minced | |
| ½ | teaspoon | Coriander-ground |
| 1 | tablespoon | Soy sauce |
| 2 | cups | Coconut cream |
| 2 | teaspoons | Lemon rind |
| 1 | teaspoon | Sugar |
| 2 | tablespoons | Butter |
| ½ | cup | Peanuts-chopped |
Directions
Pound together the shallots, garlic, chili peppers, peanuts, coriander, lemon rind, sugar and salt. Sip the pheasant in the mixture. Melt the butter in a large and deep skillet; saute the cream, soy sauce and any remaining spice mixture. Cover and cook over low heat twenty minutes, or until pheasant is tender. Season to taste.
