½ cup | Shortening (half butter) |
½ cup | Confectioners sugar |
2 | Egg yolks |
1 cup | Flour |
½ cup | Thick apricot preserves |
½ cup | Thick pineapple preserves |
Coconut Meringue |
Heat oven to 350. Mix shortening, sugar & yolks thoroughly. Stir flour into sugar mixture. Press & flatten to cover bottom of ungreased oblong pan, 13*9½*2". Bake 10 minutes. Remove from oven & spread preserves, then with Meringue. Return to oven; bake about 20 minutes, until Meringue is golden brown. Cool slightly; cut into small bars.
