Classic chicken risotto

2cupsRaw chicken, cubed
cupMAHATMA Rice
2teaspoonsItalian seasoning

1Bay leaf
2HERB-OX Chicken Flavor Bouillon Cubes or
2teaspoonsHERB-OX Chicken Flavor Bouillon Instant Powder
4tablespoonsFreshly grated Parmesan cheese
1tablespoonFinely chopped parsley

Directions

Heat butter and oil in a large saucepan. Saute the onion and chicken for 3 minutes. Add rice and Italian seasoning, cook for 2 minutes.

Add HERB-OX Bouillon cubes/instant powder, water and bay leaf. Bring to a boil. Stir once and lower heat to simmer. Cover and cook for 18 minutes until rice is creamy and liquid is absorbed. Remove bay leaf.
