Classic chicken risotto

| 1 | tablespoon | Olive oil |
| 1 | medium | Onion, finely chopped |
| 2 | cups | Raw chicken, cubed |
| 1½ | cup | MAHATMA Rice |
| 2 | teaspoons | Italian seasoning |
| 2½ | cup | Water |
| 1 | Bay leaf | |
| 2 | HERB-OX Chicken Flavor Bouillon Cubes or | |
| 2 | teaspoons | HERB-OX Chicken Flavor Bouillon Instant Powder |
| 4 | tablespoons | Freshly grated Parmesan cheese |
| 1 | tablespoon | Finely chopped parsley |
Directions
Heat butter and oil in a large saucepan. Saute the onion and chicken for 3 minutes. Add rice and Italian seasoning, cook for 2 minutes.
Add HERB-OX Bouillon cubes/instant powder, water and bay leaf. Bring to a boil. Stir once and lower heat to simmer. Cover and cook for 18 minutes until rice is creamy and liquid is absorbed. Remove bay leaf.
