Chocolate mini cakes

| 1 | cup | Granulated sugar | 
| 2 | teaspoons | Baking powder | 
| ½ | teaspoon | Salt | 
| ½ | cup | Applesauce -- at room |

| ¾ | cup | Skim milk -- at room |

| 1 | teaspoon | Vanilla | 
| 4 | teaspoons | Egg whites -- whipped | 
| 1 | Bars unsweetened chocolate | |
| (2 oz) melted | ||
Directions
Preheat oven at 350.  Prepare 8 small loaf pans with cooking spray and flour.  In a mixing bowl, combine flour, sugar, baking powder, and salt. In another mixing bowl, combine milk, vanilla, egg whites, and chocolate. Pour into pans, filling each ½ full.  Bake for 20 to 25 minutes.  Cool 10 minutes; remove from pans.
