Chocolate mini cakes

Yield: 8 servings

Measure Ingredient
1½ cup Unbleached flour
1 cup Granulated sugar
2 teaspoons Baking powder
½ teaspoon Salt
½ cup Applesauce -- at room
\N \N Temperature
¾ cup Skim milk -- at room
\N \N Temperature
1 teaspoon Vanilla
4 teaspoons Egg whites -- whipped
1 \N Bars unsweetened chocolate
\N \N (2 oz) melted

Preheat oven at 350. Prepare 8 small loaf pans with cooking spray and flour. In a mixing bowl, combine flour, sugar, baking powder, and salt. In another mixing bowl, combine milk, vanilla, egg whites, and chocolate. Pour into pans, filling each ½ full. Bake for 20 to 25 minutes. Cool 10 minutes; remove from pans.
