Chimayo chile sauce (hl)

Yield: 1 Servings

Measure Ingredient
6 Chimayo chilies, seeded and stemmed
½ medium Yellow onion, sliced
2 Cloves garlic
2 cups Water
1 Bay leaf
Salt to taste

Combine all ingredients except salt in a sauce pan and bring to a boil.

Simmer for 10 minutes. Remove from heat and blend until very smooth adding water if necessary. Salt to taste. Strain through fine mesh strainer.

Yield: 6 servings
