|1 pounds||Cheddar cheese,sharp|
|1½ cup||Pecan halves,grated|
|¼ teaspoon||Black pepper|
|1 dash||Cayenne pepper|

1. Grate cheese into a large mixing bowl. Add remaining ingredients and cream with a heavy wooden spoon until smooth. 2. Transfer to a round or oblong platter and with hands pat out flat, leaving a higher rim around edge. Refrigerate until chilled. 3. When ready to serve, fill center with strawberry preserves if desired.
