Celeriac remoulade

Ingredients

½cupMayonnaise
1tablespoonDijon mustard
2tablespoonsFinely minced parsley
2tablespoonsFinely minced tarragon
1Garlic clove; finely minced
2Sweet pickles (optional) finely chopped
2Young celeriac knobs peeled & coarsely grated

Directions

In a medium sized bowl, mix together mayonnaise, mustard, parsley, tarragon, garlic and sweet pickles (if used). Add celeriac and toss until completely coated. Cover and chill until ready to serve.
