Celeriac remoulade

Yield: 4 Servings

Measure Ingredient
½ cup Mayonnaise
1 tablespoon Dijon mustard
2 tablespoons Finely minced parsley
2 tablespoons Finely minced tarragon
1 \N Garlic clove; finely minced
2 \N Sweet pickles (optional) finely chopped
2 \N Young celeriac knobs peeled & coarsely grated

In a medium sized bowl, mix together mayonnaise, mustard, parsley, tarragon, garlic and sweet pickles (if used). Add celeriac and toss until completely coated. Cover and chill until ready to serve.
