Cajun meatloaf

Yield: 3 Servings

Measure Ingredient
2 tablespoons Butter
½ large Onion; chopped
½ cup Bell pepper; chopped
1 teaspoon Salt
¾ teaspoon Cayenne
½ teaspoon Thyme
½ teaspoon Pepper
¼ teaspoon Cumin
1 pounds Lean beef; ground
1 \N Egg; beaten
½ cup Bread crumbs
½ cup Catsup; divided
1 teaspoon Worcestershire sauce

Preheat oven to 375x. Melt butter in heavy skillet over medium-low heat.

Add onion, bell pepper & spices; cook, stirring frequently, for 10 minutes or until onions and bell peppers begin to soften. Combine ground beef, egg, bread crumbs, ¼ cup of the catsup & the worcestershire sauce. Mix well.

Add sauteed onions & bell peppers. Form into a loaf. Bake for 20 minutes.

Spread remaining catsup on top; bake for 40 more minutes.
