Yield: 4 servings
|1 cup||Black eyed peas, cooked|
|1 each||Onion, sliced|
|2 eaches||Tomatoes, chopped|
|½ each||Chili, chopped|
|1 tablespoon||Palm oil*|
|Salt & pepper|
Mash the cooked beans & set aside. Heat the oil in a pan & cook the onion & tomatoes a little before adding the mashed beans, chili & the rest of the seasonings.
Let the mixture cook for 10 minutes or so until it combines well.
Stir from time to time & add a little water if it becomes too dry.
Serve hot with mashed yams, fried plantains or rice.
