Beef and vegetable curry from lhj

Yield: 1 Servings

Measure Ingredient
2 teaspoons Vegetable oil
4 teaspoons Curry powder
4 teaspoons Minced fresh ginger
1 tablespoon Minced garlic
1 pounds Lean ground beef
1½ teaspoon Salt
4 cups Cauliflower florets
3 cups Finely chopped zucchini
1 pack Frozen peas; 10 oz
1 cup Chicken broth
1 pounds Gnocchi; cooked according to
\N \N ; package directions
½ cup Chopped fresh mint

Heat oil in large skillet over medium-high heat. Stir in curry powder, ginger and garlic; cook 30 seconds. Stir in ground beef and salt; cook, stirring, until browned. Add cauliflower, zucchini, peas and chicken broth.

Cover and cook until vegetables are tender, 10 minutes. Toss with hot gnocchi and mint in serving bowl. Makes 6 servings.
