4 | teaspoons | Curry powder |
4 | teaspoons | Minced fresh ginger |
1 | tablespoon | Minced garlic |
1 | pounds | Lean ground beef |
1½ | teaspoon | Salt |
4 | cups | Cauliflower florets |
3 | cups | Finely chopped zucchini |
1 | pack | Frozen peas; 10 oz |
1 | cup | Chicken broth |
1 | pounds | Gnocchi; cooked according to |

Directions
Heat oil in large skillet over medium-high heat. Stir in curry powder, ginger and garlic; cook 30 seconds. Stir in ground beef and salt; cook, stirring, until browned. Add cauliflower, zucchini, peas and chicken broth.
Cover and cook until vegetables are tender, 10 minutes. Toss with hot gnocchi and mint in serving bowl. Makes 6 servings.
