Beef and lima bean stew

Yield: 4 servings

Measure Ingredient
4 tablespoons Vegetable Oil
2½ pounds Lean Beef Cubes
1 \N Clove Garlic -- minced
1 large Onion -- diced
¼ teaspoon Dried Thyme
\N \N Salt And Pepper -- to taste
1 can (12 Oz)
2 cups Baby Lima Beans, Fresh Raw

1 pack Baby Lima Beans, Frozen
\N \N Beer

Place oil in a Dutch oven. Add beef cubes and brown. Add garlic, onion, and seasonings. Saute for 5 mins more. Add beer, cover, and simmer for 2 hours. or until meat is just about tender. Add water if necessary, but only small amounts at a time, since a fairly concentrated essence is desired. After the 2 hrs, add lima beans and continue cooking another half hour. Serve over steaming hot rice.
