Bayou chicken bake

1½ | \N | To 2 tsp. Cajun or Creole seasoning |
½ | cup | Chopped onion |
1 | cup | Uncooked regular long-grain rice |
1 | pack | (16 oz.) frozen black-eyed peas |
2 | cans | (14 1/2 oz. each)Cajun-style stewed tomatoes |
2 | tablespoons | Chopped fresh parsley |
Preheat oven to 350øF. Lightly grease 13x9 inch baking dish. Sprinkle chicken with Cajun seasoning; place in baking dish. In large bowl, combine onion, rice, black-eyed peas and tomatoes. Pour over chicken. Cover and bake 45 minutes. Uncover and bake 15 minutes longer, or until chicken is cooked through. Sprinkle with parsley before serving. Makes 4 to 6 servings.
