Baked lemon pudding (diabetic)

Measure Ingredient
3 Eggs; separated
¼ teaspoon Salt
1 tablespoon Liquid sweetener
⅓ cup Lemon juice
2 tablespoons Low fat butter
5 tablespoons Flour
1½ cup Skim milk

Combine egg whites, salt and sweetener. Beat well until peaks form. Combine yolks with remaning ingredients. Fold egg yolks into whites. Pour into quart casserole and bake at 350 degrees for 1 hr. Cool before serving.
