Bagel & eggs

Yield: 6 Servings

Measure Ingredient
3 \N Bagels
1 tablespoon Butter
6 \N Eggs
½ cup Shredded low-fat cheese
\N \N (Danbo or cheddar style)
1 \N Green onion, sliced
\N \N Pinch each salt and pepper

Cut bagels in half to make 2 rings. If necessary, trim to make holes about 1 inch round. Spread butter over cut sides; place, cut side up, on well greased rimmed baking sheet. Broil for 2 minutes or until golden.

Turn bagels over; break egg into center of each. Sprinkle cheese, onion, salt and pepper over each egg; bake in 350øF oven for 12 to 15 minutes or until whites are set and yolks are slightly runny. Makes 6 servings. Typed in MMFormat by cjhartlin@... Source: Canadian Living's Best Light Cooking.
