Arborio rice salad

Ingredients

| 1 | teaspoon | Dijon mustard |
| 1 | teaspoon | Salt |
| 2 | teaspoons | Red wine vinegar |
| 6 | tablespoons | Olive oil |
| 1 | cup | Arborio rice |
| 8 | cups | Water |
| 1 | tablespoon | Salt |
| ½ | cup | Swiss cheese -- diced |
| ¼ | cup | Black olives -- diced |
| ¼ | cup | Green olives -- diced |
| ¼ | cup | Green peppers -- diced |
Directions
Whisk together first 4 ingredients and set aside. Boil rice in water and salt for 10-12 minutes. Drain and rinse well. Toss with dressing and remaining ingredients. Rest at room temperature for awhile before serving.
