Arborio rice salad

2teaspoonsRed wine vinegar
6tablespoonsOlive oil
1cupArborio rice
8cupsWater
1tablespoonSalt
½cupSwiss cheese -- diced
¼cupBlack olives -- diced
¼cupGreen olives -- diced
¼cupGreen peppers -- diced

Directions

Whisk together first 4 ingredients and set aside. Boil rice in water and salt for 10-12 minutes. Drain and rinse well. Toss with dressing and remaining ingredients. Rest at room temperature for awhile before serving.
