Arborio rice salad

Yield: 4 Servings

Measure Ingredient
1 teaspoon Dijon mustard
1 teaspoon Salt
2 teaspoons Red wine vinegar
6 tablespoons Olive oil
1 cup Arborio rice
8 cups Water
1 tablespoon Salt
½ cup Swiss cheese -- diced
¼ cup Black olives -- diced
¼ cup Green olives -- diced
¼ cup Green peppers -- diced

Whisk together first 4 ingredients and set aside. Boil rice in water and salt for 10-12 minutes. Drain and rinse well. Toss with dressing and remaining ingredients. Rest at room temperature for awhile before serving.
