Yield: 60 cookies
|1 cup||Granulated sugar|
|1 cup||Plus 3 tbsp. soft shortening|
|2 cups||Ground almonds|
|1 teaspoon||Vanilla extract|
Mix in 3¼ cups flour. Knead dough very well. Roll to ⅛ to ¼ inch thickness. Cut with cutters. Place on ungreased cookie sheet.
Bake at 350 degrees for 20 minutes or until light brown. Spread half of cookies with raspberry jam, top with matching cookies. Dip in granulated sugar. Submitted By BARRY WEINSTEIN On 06-17-95
