Vegetable paella

Ingredients

2Carrots; chopped
2Celery; chopped
2Green onion; chopped
1largeWhite onion; chopped
8Sprigs fresh thyme; leaves only
8Sprigs fresh mint; minced
3tablespoonsParsley; fresh minced
½teaspoonTurmeric
3tablespoonsTomato sauce
1cupRice
1cup(to 2 c) Water or Chicken stock
1canPeas

Directions

In a large pot or wok, saute leek, green pepper, carrots, celery, green onion and white onion... about 2-3 minutes. Add fresh thyme, mint and parsley. Add turmeric and tomato sauce. Add 1 cup rice and saute another minute or two. Add 1 to 1½ c water or chicken stock, cover and simmer 15 minutes. Add peas, cover and simmer another 5 minutes or until all moisture is absorbed by rice. Mmmmmm, delicious, simple and quick.
