Vegetable paella

| ½ | large | Green pepper; chopped |
| 2 | Carrots; chopped | |
| 2 | Celery; chopped | |
| 2 | Green onion; chopped | |

| 8 | Sprigs fresh thyme; leaves only | |
| 8 | Sprigs fresh mint; minced | |
| 3 | tablespoons | Parsley; fresh minced |
| ½ | teaspoon | Turmeric |
| 3 | tablespoons | Tomato sauce |
| 1 | cup | Rice |
| 1 | cup | (to 2 c) Water or Chicken stock |
| 1 | can | Peas |
Directions
In a large pot or wok, saute leek, green pepper, carrots, celery, green onion and white onion... about 2-3 minutes. Add fresh thyme, mint and parsley. Add turmeric and tomato sauce. Add 1 cup rice and saute another minute or two. Add 1 to 1½ c water or chicken stock, cover and simmer 15 minutes. Add peas, cover and simmer another 5 minutes or until all moisture is absorbed by rice. Mmmmmm, delicious, simple and quick.
