Southwest vegetable paella

Ingredients

1mediumOnion; chopped
1mediumGreen pepper; cut into 1\" pieces
2Cloves garlic; minced
1cupLong-grain white rice; uncooked
1can(14 1/2oz) vegetable broth
1can(10 oz) diced tomatoes with green chiles
¼teaspoonTurmeric
¼teaspoonRed pepper
1can(15 oz) black beans; rinsed & drained
1can(11 oz) whole kernel corn; drained

Directions

In a large skillet, heat suate liquid and cook onion, green pepper, and garlic till tender (4-5 mins). Add rice, vegetable broth, tomatoes, & spices. Bring to a boil, reduce heat to low, cover, and simmer 15 minutes.

Stir in black beans and corn, cover, and cook an additional 5 mins.
