| ¾ | pounds | Mild Italian Sausage | 
| 16 | ounces | Canned Tomatoes; Drain & Coarsely chopped or 20 Sundried, packed in oil, drained and chopped | 
| 2 | cans | Chicken Broth | 
| ½ | teaspoon | Turmeric | 
| ¼ | teaspoon | Saffron | 
| 2 | cups | Uncle Ben's Converted Orig. Rice | 
| 1 | Onion, large; Cut into wedges | |
| 2 | Cloves Garlic; Minced | |
| 1 | pounds | Medium shrimp; peeled, dev. & cook | 
| 1 | Green Pepper; Cut into strips | |
| 10 | Mussels; Cleaned & Steamed | |
Directions
Cut chicken breasts into ½" strips.  Combine paprika, salt and pepper in small bowl.  Add chicken and stir until all seasoning is worked into the meat.  Cut sausage into ¼" pieces; remove casing.  Pat tomatoes completely dry with paper towel (if using sundried).  Add enough water to chicken broth to make 3-¾ cups.  Bring to a boil in 12" skillet.  Stir in turmeric, saffron, rice, onion, garlic, chicken, sausage and tomatoes. 
Cover and simmer 20 minutes.  Remove from heat.  Stir in shrimp and green pepper; if desired, top with mussels.  let stand covered until all liquid is absorbed, about 5 minutes.  Makes 10 servings, 378 calories per serving, prepared with canned tomatoes.
