Ingredients

3tablespoonsFresh basil; chopped
¼cupParmesan cheese
3tablespoonsLemon juice
½cupOlive oil
3cupsLong grain rice; cooked
1cupWild rice; cooked
1Green bell pepper; chopped
1Red bell pepper; chopped
½cupRed onion; chopped
¾cupBlack olive; sliced
Salt and pepper

Directions

In blender, combine basil, Parmesan and lemon juice. With motor running, slowly add olive oil to make a creamy dressing. Combine remaining ingredients in a bowl. Add dressing and toss gently with a fork to blend.
