Ingredients

| 3 | tablespoons | Fresh basil; chopped |
| ¼ | cup | Parmesan cheese |
| 3 | tablespoons | Lemon juice |
| ½ | cup | Olive oil |
| 3 | cups | Long grain rice; cooked |
| 1 | cup | Wild rice; cooked |
| 1 | Green bell pepper; chopped | |
| 1 | Red bell pepper; chopped | |
| ½ | cup | Red onion; chopped |
| ¾ | cup | Black olive; sliced |
| Salt and pepper | ||
Directions
In blender, combine basil, Parmesan and lemon juice. With motor running, slowly add olive oil to make a creamy dressing. Combine remaining ingredients in a bowl. Add dressing and toss gently with a fork to blend.
