|75 millilitres||Olive oil; (5tbsp)|
|½ \N||Lemon; juice of|
|\N \N||Finely grated zest of 1 lemon|
|\N \N||Salt & freshly ground black pepper|
|30 millilitres||Capers; drained and roughly|
|\N \N||; chopped (2tbsp)|
|30 millilitres||Garlic chives; chopped (2tbsp)|
|4 \N||Tarakihi steaks; each weighing|
|\N \N||; approximately 175g|
|\N \N||; (6oz)|
|\N \N||Butter for frying|
Whisk oil into lemon juice. Add lemon zest, seasoning, capers and chives.
Season fish and pan-fry in butter for 3-4 minutes each side or until thoroughly cooked.
Remove from pan and keep warm.
Warm the lemon dressing in the frying pan and pour over the fish. Serve with couscous.
