Tarakihi with lemon and caper dressing

75millilitresOlive oil; (5tbsp)
½Lemon; juice of
Finely grated zest of 1 lemon
Salt & freshly ground black pepper
30millilitresCapers; drained and roughly
; chopped (2tbsp)
30millilitresGarlic chives; chopped (2tbsp)
4Tarakihi steaks; each weighing
; approximately 175g
; (6oz)
Butter for frying

Directions

Whisk oil into lemon juice. Add lemon zest, seasoning, capers and chives.

Season fish and pan-fry in butter for 3-4 minutes each side or until thoroughly cooked.

Remove from pan and keep warm.

Warm the lemon dressing in the frying pan and pour over the fish. Serve with couscous.
