Summertime jambalaya

| 1 | cup | Onions -- chopped |
| 1 | cup | Celery -- chopped |
| 1 | teaspoon | White pepper |
| 1 | teaspoon | Dried thyme |
| 2 | Bay leaves | |
| 1½ | teaspoon | Salt |
| 1 | teaspoon | Black pepper |
| 1 | teaspoon | Sage -- rubbed |
| 2 | teaspoons | Cayenne pepper |
| 3 | Cloves garlic -- minced | |
| ½ | pounds | Ham -- chopped |
| 1 | pounds | Smoked sausage -- chopped |
| 2½ | cup | Chicken stock |
| 1 | cup | Tomatoes -- chopped |
| ½ | cup | Tomato sauce |
| 1½ | cup | Rice -- uncooked |
Directions
Brown chicken in oil, add vegetables, garlic and spices. Simmer for 3 minutes, add chicken stock, ham, sausage, tomatoes and tomato sauce. Cover and bring to a boil stirring occasionally. Cook for 3 more minuntes, remove from heat and add converted rice. Cover and let stand until liquid is absorbed and rice is tender.
