Summertime jambalaya

2tablespoonsOlive oil
1cupOnions -- chopped
1cupCelery -- chopped
1teaspoonWhite pepper
1teaspoonDried thyme
2Bay leaves
teaspoonSalt
1teaspoonBlack pepper
1teaspoonSage -- rubbed
2teaspoonsCayenne pepper
3Cloves garlic -- minced
½poundsHam -- chopped
1poundsSmoked sausage -- chopped
cupChicken stock
1cupTomatoes -- chopped
½cupTomato sauce
cupRice -- uncooked

Directions

Brown chicken in oil, add vegetables, garlic and spices. Simmer for 3 minutes, add chicken stock, ham, sausage, tomatoes and tomato sauce. Cover and bring to a boil stirring occasionally. Cook for 3 more minuntes, remove from heat and add converted rice. Cover and let stand until liquid is absorbed and rice is tender.
