1 | pack | (20-oz) frozen chopped okra |
1 | Green or red pepper, diced | |
1 | Onion, diced | |
1 | can | (7-oz) diced green chiles |
1 | can | (28-oz) tomatoes |
3 | smalls | Potatoes, diced |
2 | pints | Water (or enough water to bring the juice from the canned tomatoes to 2 pints) |
Directions
Soak the okra in water for 1 hour. Drain. Combine all ingredients and bring to a boil. Turn down the heat, clamp on the lid, and cook for 30 minutes or longer until sauce is thick.
Serves 6 to 8.
