Spinach and bean gratin

Yield: 4 servings

Measure Ingredient
1 tablespoon Sunflower oil
1 Onion
225 grams Mooli or radish
400 grams Chopped tomatoes
400 grams Cannellini beans
225 grams Frozen spinach
1 teaspoon Ground cuumin
1 tablespoon Fresh chopped thyme
100 grams Breadcrumbs

Preparation: Chop the onion. Halve the mooli lengthways and slice into semi circles

1. Preheat the oven to 200c/400f/gas 6. Heat the oil in a large pan and fry the onion and mooli together for 5 minutes until softened.

2. Add the tomatoes, cannellini beans, spinach, cumin, and thyme.

Add seasoning to taste and simmer for 5 minutes.

3. Transfer the mixture to an ovenproof casserole dish, top with breadcrumbs and bake for 25 minutes until golden.
