Spicy lentil potato stew

Yield: 4 Servings

Measure Ingredient
½ cup Lentils (uncooked)
1 cup Chopped carrots
¼ cup Chopped celery leaves
3 \N Cloves chopped garlic
½ teaspoon Dried basil
2 cups Tomato juice
2 mediums Potatoes (don't peel) (chop into 1/2\" cubes)
½ cup Chopped celery
1 tablespoon Chili powder (or less)
½ teaspoon Dried oregano
¾ cup Water

Throw it all in a large sauce pan, mix it up, and bring it to a boil.

Cover, reduce heat and simmer til veggies are tender (about 45 minutes). Hope you like it, Michele
