Southestern shrimp creole

1mediumOnion, chopped
1largeGreen pepper, chopped
1Garlic clove, minced
1packDiced pimientos (4 oz)
teaspoonSalt
teaspoonPepper
1canRO*TEL Diced Tomatoes and Green Chilies (10 oz)
1poundsShrimp, shelled and deveined
Cooked rice

Directions

In a large skillet, melt margarine; saute onion, pepper and garlic until tender. Stir in pimientos, salt, pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done, about 5 minutes, stirring occasionally. Serve with cooked rice.
