Southestern shrimp creole

Ingredients

| 1 | medium | Onion, chopped |
| 1 | large | Green pepper, chopped |
| 1 | Garlic clove, minced | |
| 1 | pack | Diced pimientos (4 oz) |
| ⅛ | teaspoon | Salt |
| ⅛ | teaspoon | Pepper |
| 1 | can | RO*TEL Diced Tomatoes and Green Chilies (10 oz) |
| 1 | pounds | Shrimp, shelled and deveined |
| Cooked rice | ||
Directions
In a large skillet, melt margarine; saute onion, pepper and garlic until tender. Stir in pimientos, salt, pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done, about 5 minutes, stirring occasionally. Serve with cooked rice.
